Make it simmer at medium to low heat for 45 minutes to an hour or until the meat becomes tender enough for your preferences. Stir in fish sauce and the tamarind paste.

Add in the rest of the vegetables. Simmer until the vegetables are tender, 5 to 8 minutes. Cook kangkong for 1 minute. Adjust everything to taste. Serve immediately with rice. Enjoy!
